1 small can (8 ounces) pineapple tidbits packed in juice
¼ cup reduced-fat mayonnaise
1 cup (8 ounces) shredded carrots
1/3 cup raisins
¼ cup chopped walnuts
Drain off ¼ cup of the juice from the pineapple into a 2-quart or larger serving bowl. Drain off any remaining juice and reserve for another use.
Stir in the mayonnaise to blend well, then add the drained pineapple, carrots, raisins, and walnuts.
Toss gently but thoroughly to coat with the dressing and serve at once or cover and refrigerate until ready to use.
Chili Relleno Casserole
6 large eggs
1 lb Jack cheese
1 lb cheddar cheese
8 oz whole green chilies - chopped can be used
Preheat the oven to 350F. Grease a 9 x 13-inch casserole dish.
Beat egg whites until stiff. Mix yolks until smooth. Fold yolks into whites; salt & pepper to taste. Grate cheeses and combine together. Spread small amount of egg mixture in dish. Split green chilies and layer on top of mix in dish. Sprinkle grated cheese on top. Repeat layers until the ingredients are gone finishing with egg.
Bake for 25 minutes, or until brown.
Biscuits & Gravy - Ben's favorite
1/2 pound bulk pork sausage or ground beef
2 T chopped onions
3 T flour
2 C milk
Salt and pepper, to taste
1 batch Southern Biscuits
Heat frying pan and fry the sausage and onion until the sausage is brown and the onion clear. Drain off all grease except for 2 tablespoons. Stir in the flour and cook for just a minute. Add the milk slowly. Stir constantly until the mixture thickens and then season with salt and pepper.
Serve over warm opened biscuits.
2 1/4 cups Bisquick Original baking mix
2/3 cup milk
Heat oven to 450 degrees.
Stir ingredients until soft dough forms.
Turn onto surface dusted with baking mix
Knead, roll & cut.
Place on ungreased cookie sheet.
Bake 8 to 10 minutes or until golden brown.
For cheese-garlic biscuits – Decrease baking mix to 2 cups and add 1/2 cup shredded cheese. Do not knead dough. Drop by spoonfuls onto ungreased cookie sheet. Mix 2 T margarine or butter, melted, and 1/8 tsp garlic powder & brush over warm biscuits.
