How easy it was to cook for the kids, they loved easy wholesome foods including stew, chili, etc. Most foods I made through habit with nothing written down.
Stew
1 or more lbs. stew meat - I use chuck steak or roast and cut it my self.
1 onion
6-8 stalks of celery
4-6 carrots
5-6 potatoes
2 beef or vegetable bouillon
Brown the beef in a bit of olive oil, add onion and celery. Brown a little more. Add about 4-6 cups of water, the bouillon, any spices you use and cook until meat is tender. Add carrots, cook awhile longer and add potatoes. I thicken with cornstarch.
Serve with homemade biscuits or french bread.

Chicken Tortilla Casserole
1 chicken or 4 breasts 1 can mushroom soup
1 can celery soup 1 can chili without beans
1 can ortega green chilis 1/2 cup milk
1 onion 12 corn tortillas, torn
1 lb cheese, grated into 1 inch pieces
Cook chicken & shred. Mix together soups, chili, peppers, milk and grated onion. Grease casserole with broth from chicken. Repeat layers of tortillas, chicken, sauce and cheese. Bake 40 minutes in 350 degree oven.

Filipino Chicken
1/4 C soy sauce Garlic to taste
1/4 C vinegar Salt to taste
1 T light corn syrup 1 frying chicken
Combine soy sauce, vinegar, corn syrup, seasonings and pour over chicken in a 2 qt or larger sauce pan. Cover and simmer for 40 minutes or until tender. Serve hot or cold
